Super fast rainy day meal today worked it out at 6 Syns including the “lazy rice”.
I used only 2 small chicken fillets and bulked up
With 2 onions, a yellow and a green pepper and a full bag of green beans to push up the super-free portion!
First, fry 4 tablespoons (a full jar of tesco Thai green curry paste) in a hot wok with fry light. Then added the chicken pieces and stirred to seal then added the veg.
Added 2 tablespoons light soy sauce and a 400ml tin light coconut milk, brought it to the boil, then simmered for 15 mins.
I realised just before I started cooking that we were out of rice so I dispatched himself to the shop and he brought back Tilda steamed brown basmati rice- tasty and handy and 2.5 syns per bag, so I had about 1/3 of the bag!
The curry made 4 nice portions and we will have leftovers for lunch tomorrow!
